Cooking

So today I had cookery again. Damnnn. As much as I love Food Tech I just can't be bothered with cooking at the moment. The muffins I made were really nice though and very easy to make.

Banana & Chocolate Chip Muffins (:

Makes 11 - 12 (Actually made 10 big ones for me aha)

10oz (280g) plain flour
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
1/2 teaspoon salt
3 large well ripened bananas
4oz (110g) fine white granulated sugar
1 egg beaten with a fork
2-3 fl oz (60-90 mls) milk or water (I used milk)
3 fl oz (90ml) vegetable oil or 3oz (85g) butter, melted (I used butter)
2-3 oz (60-85g) plain chocolate chips

1. Prepare muffin cases. Preheat oven to 375-400 F (190 - 200 C) for a conventional oven, Gas mark 5- 6.
2. In a large bowl, sift together the flour, baking powder, bicarb of soda, salt and chocolate chips.
3. In another bowl, mash the bananas thoroughly with a potato masher. Stir in sugar, egg, milk/water and oil/butter.
4. Pour all of the wet ingredients into dry. Stir just until batter is evenly mixed but still lumpy. No dry flour should be visible.
5. Spoon the mixture into tins and bake for 20 - 25 mins or until the tops are lightly browned and spring back when pressed gently
